Moving into a new house and looking to buy a some good quality knives for the long term.
What’s some good (yet no fancy or crazy expensive) knives you would recommend for various types of uses (meats, fish, cheese, etc..)

My boyfriend really enjoys cooking and has been wanting to get a knife set for a while so I’m planning on getting him a set for Christmas but I don’t know the first thing about cooking or good knives. I was wondering what a good set would be for someone who enjoys casual cooking and is reasonably priced.
I’ve been trying to upgrade my kitchen with a solid knife set, but honestly, it’s been tough to find one that actually works for me. Between issues with sharpness, balance, durability, or just not getting the right grip feeling a bit stuck.
So many options stainless steel, high-carbon, Damascus, ceramic, plus ergonomic handles.
Anyone found a knife set that truly improves cooking? Looking for great edge retention, comfy handling, and lasting sharpness recommendations welcome

I do a lot of cooking for friends and family and was wondering would a good professional knife set would be. Not to concerned about price.
As the tittle says I'm looking for a good knife block set that has almost everything I'll need, from a chef knife, to a bread and slicing knife. I'm willing to spend the money for quality but I just don't know what to, the options are overwhelming and it's hard to know what's good and what isn't.
