I have had many knifes/brands of all prices, and honestly you can’t go wrong with a Victorinox Fibrox Chef's Knife. Grab a paring knife and a serrated knife of the same range and a honing steel. r/TrueChefKnives/ generally, knife sets are not a good investment. they tend to be low quality and comprised of more knives than you need. a good 8-10 "chefs knife" can do just about everything you need to do in the kitchen. start with that and branch out from there. most professional chefs use mass produced mid tier knives. $50-120. they work great and last a long time but aren't super precious. Victorinox, Tojiro DP, Misono, Global, Wusthof, and Henkel are all fine options. 7 years ago I personally decided i wanted a few really nice knives in the kitchen. I got a Mazaki 240 gyuto in white #2 steel, and 3 high end stones to sharpen them. (i now have many more) this investment of 1 knife and the stones set me back over $600. the knife needs to be babied. it's not stainless, needs to be wiped after each use, and requires regular sharpening. You can't leave it dirty. Can't leave it in the sink. For these reasons, I can't say I recommend this route for the average home cook. It's kinda like owning a high end sports car or an alfa romeo. it will need regular maintenance. but it will give you immense pleasure when you use it. after you get the chefs knife, you can look at a smaller petty knife, possibly something like a nakiri, a chinese vegtable cleaver, etc for more specialized tasks.

I’ve been trying to upgrade my kitchen with a solid knife set, but honestly, it’s been tough to find one that actually works for me. Between issues with sharpness, balance, durability, or just not getting the right grip feeling a bit stuck.
So many options stainless steel, high-carbon, Damascus, ceramic, plus ergonomic handles.

Don't get a set unless you really know how to use all the different types of knives. Just get a good chef's knife, a cheap set of shears, and maaaybe a bread knife (which also should be super cheap). I like the Zwilling Pro 8-inch chef's knife. The way the bolster is designed makes it super comfortable for the pinch grip, and you can slice with the heel of the knife, which is great if you're doing very fine cuts, like mincing garlic or shallots.
