Recently got into good coffee and have been trying out a variety of gourmet roasters to find beans that I like. So far, my favourites have been Hatch in Markham and De Mello on Yonge and Eglinton.

What are some other great ones?

Elite specialty/competition coffee in Toronto
Sampling of shops w/ pour-over in personal order of preference: Hatch . Hatch is a great roaster. Barista Benny is very, very skilled, and probably one of the top in the city. Usually several beans on pourover, including higher end beans. Unfortunately, can't really sit around the cafe, and you'll likely have to get your pour-over to go. Also, located in Markham - you'll probably need a car. RGLR . My personal favourite coffee shop for various reasons. Multi-roaster with rotating beans, usually 2 beans on pourover, good vibes. They've also recently started roasting. Location is a bit out of the way, but I just like it so I make the trek out there. The Library Specialty Coffee , Dundas st. location. Great roaster. Good pour-over. Go during slow times. Carbonic Coffee . Go during slow times to get pour-over. Multi-roaster. Owner (Donna) roasts at Hale Coffee and the Angry Roaster. Fika . I believe they do pourover on weekdays. Multi-roaster, good selection of beans. No comment, since haven't yet had a chance to try pourover there yet. Boxcar Social (affiliated with Subtext). Multiple locations, variable quality - depends on the barista. Immersion using Gina rather than pourover. Boxcar Laneway is a cozy, unique environment, and usually fairly quiet. Summerhill location often carries beans from top roasters. Boulton location has a great shady sidewalk seating area. Hamers Coffee . Multi-roaster. Does pourover but only during slow times. Haven't yet had a chance to try pourover there yet. Subtext . Great roaster. Haven't been there personally for pourover. I think they use immersion using Gina (Goat Story). 135 Ossington . Best local coffee roasters?
People often will say Pilot, De Mello, Moonbeam, or Propeller when asking about local roasters, but if you're looking for light roasts, I'd steer away; they tend towards a relatively medium-to-dark profile since that (and espresso) is what the city tends to prefer. Some actual local light roasters: Seth Taylor is a local independent roaster and generally a great guy; probably my favourite roaster in Canada at the moment Subtext is second on the list, just a really good breadth of well-sourced beans The Library has excellent coffee as well but their beans are pricey compared to the above two. They're good, but understandable if that's not in your budget. Hatch has a broad range in general, you can probably find something you want in their lineup if you look Java Roasters and Detour can be pretty good, though their hit rate for me specifically is lower than the two above—you may have better luck if your palate is different from mine More on reddit.com

Hey folks, I've just arrived in Toronto for a couple months and I'm looking for the best coffee the city has to offer. Specifically I'm looking for shops that either roast or carry roasters with a very modern view of specialty coffee (think Sey, April, Onyx, the Barn, Fried Hats, Manhattan, etc) that do exceptional pour over and have some truly special coffee. So far most of what I've had has been a bit old school so I'm basically looking for the nerdiest spots around.

I liked Ethica Coffee Roasters when I visited last year. Great pour over menu with some not so common choices. For example, they had Yemeni coffee which was a first for me.
