Hello,
As the title suggests, I don’t know anything. I’m a songwriter and skateboarder. I’d like to film a quick edit for instagram with all the kids from the local skatepark and put one of my songs over it. Kind of goofy but one of the kids suggested it and they seem excited.
Are there any iPhone apps that would make it easier for a beginner to capture video of people skating? or any settings on the phone you’d recommend ? I’d like it to look clean if possible.

Just use the default camera app. Work on good composition and lighting. You can still set and lock exposure with that camera. Most people who is other apps are so that they can have more control over frame rates, and shutter speeds as well as the ability to shoot LOG and different codecs. If you’re a beginner you shouldn’t worry about that stuff quite yet (especially the log and codecs)

I highly recommend the app ProMovie Recorder. It lets you control most things that an actual camera would like aperture, shutter speed, white balance, and even manual focus. You can make some nice shots with it, and it's also good for practicing how to use a camera.
