For context, I am 28f living in Ontario, I make about $75k/year. I already have the Amex Cobalt card that I use when I can for groceries, restaurants, gas, etc. for the points perks, but of course it's not accepted everywhere so I'm looking for a Visa card as well.
I fly/travel outside Canada about 1-2x per year, so not a super frequent traveller. I was looking at either the Scotiabank Passport Visa Infinite card or the TD Aeroplan Visa Infinite card, but not sure if they are good for everyday in terms of perks/points as well as occasional travel. I was thinking of maybe a cashback card specifically since I already have the Amex? Hoping to keep the annual fee under $150 ish. Any thoughts/recommendations? :)

Costco visa card in Canadian Costco gas station
Worked fine in March of this year. Did it in Edmonton on the way to Anchorage from Orlando. Yes it's intimidating seeing the MasterCard only logos, but it's fine.

I would argue a credit card with a variable interest rate is likely a bad deal no matter what.
Find a card with no fee and offers some sort of reward. Pay the balance off in full each month and collect the reward. Now they're paying you to use their card.
