Hey everyone, I’m finally diving into Japanese knives after using a basic Mercer 8-inch chef’s knife for years. I recently got into sharpening with a Shapton 1k stone, and now I’m hooked on the idea of trying out Japanese steel.
I was originally planning to go with a Tojiro DP as my first Japanese knife since it’s such a popular beginner option. But I’ve noticed they don’t go on sale much, and with Black Friday here, I’m thinking it’s a good chance to spend a little more and grab something nicer—maybe around the $150 range.
What I’m Looking For:
Style: Gyuto, Santoku, Nakiri, or Bunka
Steel: Stainless (or stainless-clad)
Handle: Prefer Japanese-style, but not a dealbreaker
Budget: ~$150 (but I’m flexible if it’s worth it)
