Anyone have a commercial Bunn at home? I'm trying to decide between a Technivorm or one of these. The one in my corp office is built like a tank with thick gauge stainless housing and heavy duty components. I had never considered a commercial Bunn because I assumed they would be too expensive, but they're only ~$275 or about the same as a Moccomaster. I know the Technivorm is highly regarded, but the build quality of the materials and overall cheap feel are steering towards the over-built tank-like Bunn.

I think the main difference is aesthetics. The insides of the Technivorms are built like tanks, though some of the casing for the grounds filter and such can "feel" cheaper than a Bunn. Also the Bunns take flat-bottomed filters where the Technivorms use a wedge/cone. Don't know if that difference matters to you. Bunns are great drip machines if you don't think they're ugly and don't mind flat bottom filters.

My Bunn airpot brewer is doing a great job of keeping my router off the ground. Jokes aside, both the bunn and the moccamaster will hold up to 1-5 pots a day indefinitely with proper maintenance. I've had the same coffee from both a bunn diner-style brewer and a technivorm (although not side-by-side) and I think the technivorm was more evenly extracted. The cheaper bunns ($275 is extremely cheap for commercial equipment) tend to be built to be simple and reliable, not good at brewing coffee, and as such things like brew time and shower pattern are complete afterthoughts. You're not really going to get anything without any plastic and designed to brew good coffee until you're spending like $400 on a home machine or $800 for a commercial one.

I am curious to know if anyone is familiar with these types of coffee machines and can shed some light on what it is they do differently and if they utilize a standard drip brewing approach. or something completely different?

I have ulcerative colitis and when I make coffee at home with a standard drip machine it gives me such bad inflammation even when I use the same beans I get from starbucks. When I get the coffee at starbucks, I tolerate it so well and it makes a tremendous difference in my quality of life. I really am curious to know what it is that makes these machines different from the rest. It would be so appreciated if anyone knowledgeable on them could chime in.

Bunn machines, like the ICBT or axiom use a digital controller to brew on bursts, let say put water, wait 15 seconds, add water again wait again and so on. That way we can decide for how long the water is in contact with the coffee. Fast brewing makes weak coffee, slow brewing extracts more coffee. That's what makes those machine more expensive, you control more variables, like temperature, water bypass, and obviously size of the batch. About starbucks being better on your stomach is not going to be the machine, but the acidity. Some coffees acid, I would say try darker coffees for less acidity. Some coffees like Mexicans or nicaraguans are less acidic. Light roasts are very acidic.

They both do and don't do a lot different - because all home machines also do things different from one another in very similar fashions. How much water is used, how it's distributed across the coffee, the intervals between portions of water being added ... all of these things can make subtle differences in brewing the coffee. But none of those should make a difference with your colitis. They're not extracting anything different and as far as I know, there's nothing within "over" extraction that's particularly upsetting, or anything missing in "under" extraction that would be be similar - doing a different or sometimes better job of the same brew shouldn't matter as far as your digestive tract. You may be making your coffee at home stronger than Starbucks does in store, it is very common for home consumers to use a higher coffee:water ratio in their home machine than somewhere like Starbucks does. Most of what makes those machines so expensive is durability and pace. They're designed to remain functional over 1000s of brews because that's a typical week for them, where a home machine would take several years to put on that kind of milage. Similarly, a commercial machine needs to be capable of making back-to-back pots or similar, so needs a much better heat management system and a much beefier power supply - which turns into a more expensive electical safety system and certification.
