Hi there! Rufus from Adobe. It looks like you created a Freeform Gradient. Looks great! Freeform Gradients cannot be saved to the Swatches Panel because they are dependent on the shape you created it on (position of Points or Lines). My advice is to create a CC Library and add the gradient there. That way, you'll be able to use it easily in other Illustrator documents. Or even other apps like Photoshop or InDesign. You can’t save a gradient swatch to a CC Library, but you can save an object that is filled with the gradient to a Library. Create a shape, apply the gradient to the fill color, then add the graphic to the library.

When you created the Gradient, did you drag the fill to your Gradient swatch palette? That should happen automatically, but not sure. I usually drag the color to the Gradient swatches. Then, when you open the file, the swatch should still be there.

Your object has a Pattern Fill applied Patterns in Illustrator are like separate artboards that can be used as a color swatches. When you apply a pattern fill to an object, the object will act like a “window” to that separate artboard. If the pattern contains a gradient, the gradient will remain in the same spot even as the object moves around:
