It's impossible to know without internal Canon design details. Maybe the processor is slower or has missing features (a.k.a. "semiconductor binning" ). Maybe the sensor to processor pathway doesn't have enough bandwidth. Maybe it is just artificial product differentiation (a.k.a. "money"). Who knows. More on reddit.com

The camera can shoot 10 bit in its HDR mode like the R5,R6, R6 Mk II and R7. Is there a reason other than money why this camera lacks the ability? Other than lacking IBIS the lack of a log profile really limit this camera.

February 3, 2019 - If you can live with the 1.8x 4K crop, then the EOS R is potentially a "professional mirrorless" (as marketed by Canon), since it is capable of outputting 10-bit 4K from the 20.6 mm wide central area of its 36mm sensor. Since the external recorder has no recording length limit, the EOS R + C-Log with Atomos can do something only the $7500 - $10000 C200, C300mII can do.
