I’ve got a slightly biased recommendation. My uncle runs a shop in Spring Hill called Cave Auto and Truck Repair that does impeccable work. I speak from extensive experience since he’s handled all my car audio projects and taught me most of the basics when I was first starting out. He’s also been in the audio installation game since the 80s and used to win national competitions for his builds (you’ll see all his trophies hung up in the shop). In terms of more specific work for your project, he’s had a contract for building undercover cop cars for the city governments. He’s great at discrete installations and electrical routing; you’ll probably not be able to notice your installed camera until he points out where he mounted it. His main point is pride of work. He will not let something leave his shop until he’s fully satisfied with the repair/installation, and ONLY shoots straight with customers, not trying to upsell you on unnecessary repairs and explaining exactly what went into the job. I tell you this because the treatment I get at his shop as a family member does not imply preferential treatment. Everyone that brings their car to his shop gets the same care and consideration. The cherry on top is his prices for labor will most likely beat whatever quote you can get with “big-box” installers. He actually worked for Electronics Express as an installer for a little bit while the shop was getting on its feet, and left because he knew he could do a better job for customers on his own fair and honest terms. I can DM you his contact information if you’re interested in a quote through their shop, though if you search their shop name on Google all their information is available. The Radio Clinic on Lee Hwy is a local business spanning a few decades and they did a fantastic job with my car stereo when I tried doing it myself and couldn't finish.

They do work on a first come first serve basis. If you're up early in the morning would recommend stopping by and seeing what they can do. Prices were also very reasonable from my experience.
