This is the one I have been making since I was a kiddo, and I made it for the first time in a few years this weekend and it comes out so nicely. I did end up baking them a little longer as my cookies were a little thicker :) Also, I used parchment paper.
I do let them chill overnight as the results are really good:
Ingredients:
1/2 c butter 3/4 c sugar 1 egg 1-1/2 tsp vanilla 1-1/2 c flour 1/4 tsp salt 1 tsp baking soda
Cream together: ½ cup butter/margarine and ¾ cup sugar.
Beat in 1 egg and 1-1/2 tsp vanilla.
Sift together 1-1/2 cup flour, 1 tsp baking powder, ¼ tsp salt. Stir into creamed mixture.
Chill dough 1 hour minimum (overnight is best).
Roll out on floured board (about 3/8 inch thick). Cut with cookie cutters, place on lightly greased baking sheets (or place on parchment paper). Bake at 350 degrees Farenheit for 6 to 8 minutes.
