If you are having trouble keeping up with payments on your device, contact your mobile service provider ASAP- the earlier they know the better. Even if you do end up being able to make future payments, they’ll still be appreciative either way.
This is a common issue and the mobile service provider won’t be a stranger to the situation, they’ll have options in place for you to suit your situation.
As for what will happen, well, that depends on the mobile service provider. If they know you are having issues making payments they are less likely to stop your service, but generally if you don’t pay they will suspend your service but won’t blacklist the device you have financed with them. If they still don’t receive payment they’ll then likely blacklist the device, but will only be able to blacklist it on their own network (they can only blacklist the device across all networks if it’s reported as stolen).

• it's only for 2 months, you can switch to a cheaper plan at month 3
• this process works with any of the deals. If the deal is "get $PHONE for $PRICE when you also buy $MONTHS of service" then you can switch to whatever plan you want after you complete those $MONTHS of service.
You can do that switch via your online account and or online chat when it's getting close to your monthly renewal date

Will choosing AT&T as my carrier to finance work (since Cricket is a subsidiary of AT&T)? If anyone has any feedback or experience with this on the new iPhone, it would be greatly appreciated?
It’s brand new so I don’t need repairs or a new battery for a couple of years probably. I don’t drop the phone but sometimes I go without the Apple leather case (I had one in a drawer from last time) but I should add it is slippery without a case. Should I bother with Apple’s $12 monthly protection plan? I’m thinking more of a replacement cost (the ‘Theft & Loss’ part) because I doubt Cricket will have this deal much longer. Each year of AC+ will cost $144.
