I am very much interested in learning how to program cryptography on my spare time. For those of you that have experience programming cryptography in a production environment--what book references did you find helpful when learning it?

Not a book, but the Cryptopals challenges will probably teach more than any book will.

It was many years ago but I liked Bruce Schneier's Applied Cryptography (easy to find as a pdf, and there is source code too) as it has clear examples in C for many protocols and algorithms. There are a lot of other, newer books around but this one is great as a foundation and it is also good to look at the critiques. Of course, it is a start. It is good to learn defensive programming so useful data does not leak unencrypted. It does omit a lot of newer stuff that has happened like ECC and quantum resistant cryptography.
