For LS/FS it does not matter, it will work. For HS, it depends on how you wire things up to the connectors. If you plan on also using standard cables, then it may be unstable. If the cable will be actual USB cable just terminated to a different connector, it will likely be fine. And absolutely no for anything USB3. Given that it is a keyboard, it will likely be FS. So the ones where the RS232 serial adapter is embedded right into the USB cable so it is USB-A to RJ45 essentially but let's not forget there is a chip inside. Fortinet sells good ones with their own logo but those are really expensive. I've ordered two different off-brand ones from Aliexpress but some of them don't work at all (gibberish at even 9600 baud) and some work at lower speeds like 9600 but not at higher speeds like 115200.
I think as per the rules you cannot put eBay/Amazon/Aliexpress/etc links here but if anyone knows a branded/semi-branded one which can be named then please do or send me a DM if you have a link to a tried and tested one.

Lmao why is everyone hating on this so hard. USB signals get sent over all sorts of non-standard connectors. As someone pointed out many industrial tooling use ruggedised locking connectors on the equipment that terminate with a USB A on the other. OP - yes this can “technically” work if you create a custom connector for your keyboard and recipient device. My only suggestion would be to fill all the unused pins with epoxy so the cable is somewhat keyed to your custom arrangement. Just reduces the chance it gets plugged into the wrong thing one day. But yes, this will work for a flippin keyboard. If it doesn’t - solder on a normal USB A. You had fun trying.
