As you can see in your benchmark, the differences in overall performance are trivial. Stick with the 32GB kit; while 16GB is enough for the vast majority of games, if you want to keep stuff like browser, Discord etc. in the background, 32 is markedly better. So I recently got gifted my friend’s old ddr4 RAM as he upgraded to am5. Now my question is performance wise would I be better of pairing the 3600 mhz ram with my current Ryzen 7 5800x3d as opposed to the 3200 mhz I am currently running? It would mean a downgrade in terms of capacity, but the timings and frequency seems better. Any thoughts?

I'd absolutely go for the 32 GB. The performance you lose is so minor it's basically irrelevant.
