I’m fixing to go back to school for the first time in over a decade and I need a computer I can take with me. Wouldn’t mind if it could handle a little more than just schoolwork too. I’ve been looking at ebay refurbished to save some money and wondering if this would cut it or if something that old (assuming like 2018-ish?) will be unable to even take updates to keep it running and up to snuff.

That will be fine for most tasks. Upgrade it to 16GB of RAM, and make sure you have an SSD with plenty of space (at least 512GB) and you should be in good shape.
