Hello,
I'm a freelance civil engineer, I already work with a XPS 9570 4K with intel core i7 8750H + 16 GB RAM + NVIDIA GeForce GTX 1050 Ti. I really love working with this setup, monitor is great, I can work with 3D modeling, Technical Drawing, I can got structural calculations and analysis with specific software or 3d photo rendering in a decent amount of time. Obviously fans are doing their work.
Now it's time to get a destkop. I contacted a local partner reseller to got some suggestions about the setups. I called them asking for a desktop XPS with a good setup, like an i7 or i9 from the latest generation, a good amount of ram and a good video graphics hardware.
They suggested me a Precision Workstation with software certified hardware: they still have to write me down the entire setup, but they talked about 3630 workstation with intel XEON instead of intel i7 or i9 processor and NVIDIA® Quadro® P2200 5 gb.
They told me Xeon are better than i7 or i9 processors. I sincerely never thought to purchase a pc with intel xeon, since I don't know anything about it except the fact that they are used in servers because they are more stable.
Can you please help me and give me some suggestions?

So the Xeon chips are much better quality silicon vs the i9 and i7s. Which is why they push it towards business grade workloads rather than consumer. These days Xeons even push their speeds (GHz) as high as the prosumer CPU's so that is no longer a valid comparison. TLDR: If you have a specific need for ECC (Error Correcting Memory), get the Xeons, otherwise stick to the prosumer cpu's like i9 and i7.

Freelance civil estimator here. What software are you using? Be specific because that's going to determine whether you really need a Quadro or a Xeon. Some programs, like Solidworks, perform significantly better with a Quadro vs. the comparable Geforce. If phrases like 'double-sided polygon editing' and 'hardware anti-aliasing' are meaningful to you, get a Quadro. However, if the 9570 is keeping up for you with the 1050 Ti, the Geforce may be unnecessary. The only hardware accelerated software I was using was Bluebeam Revu and I found both the Quadro and Geforce cards performed just fine for my purposes. Suggestion if you decided to go Quadro - check out the Dell Outlet. The Precision line is significantly cheaper over there than retail and the prices are only a bit more than their XPS counterpart.

I currently have a 75550 w/ Xeon 10885M processor. I plan to upgrade to 7680 and I couldn't find a single Dell mobile workstation with Xeon processors anymore. Are they discontinued? What could be the reason for discontinuing Xeon (workstation) processors on workstation laptops?

Intel stopped making mobile Xeon processors in the 11th generation. https://www.intel.com/content/www/us/en/products/sku/series/125035/intel-xeon-w-processor.html (select “Mobile”) Standard Intel i7/i9 processors are just fine and you can get 13th Gen processors without issue.
