Nothing wrong with a default template on square space. When I review portfolios, I'm in and out in less than 3 minutes, and nothing annoys me more than some weird custom coding that hampers my ability to absorb the projects quickly. One portfolio I reviewed was literally a 3D art gallery that had the projects on the walls, and you actually had to use the arrows to walk around and see the different projects. Sure, it's a fun idea, but don't make that the primary method of navigation on your website. Another one I remember is some dude actually had one of those old point and click escape room puzzles at the front of his portfolio that he made just to get into his website. Blew my mind that this guy thought any professional would take the10 minutes solving a puzzle to see his student work. Anyway, use square space. It's clean, stupid easy, and no one will fault you at all for using a premade template - your projects are the star of your show, not your website coding abilities.
