Quesadillas are favorites here. Buy a rotisserie chicken and shred it. Heat a tortilla with some shredded cheese, veggies (eg peppers, onions, but anything you have is good), throw some chicken and more cheese in there. Cut it into triangles, serve with guac, sour cream, salsa, beans, etc. We usually do something like carrot sticks on the side. More on reddit.com

It’s a random Monday - Thursday evening. You have an hour to make dinner, for a family of five that eats like a family of 8. What are you making? I feel like I make the same things over and over. Hamburgers, breakfast for dinner (waffles, bacon, and eggs), spaghetti, chicken gravy with mashed potatoes, hot dogs, salad. Over the past nine years of having kids I have slipped into a very habitual lifestyle to maintain order. But I really think it’s time I spice things up in the kitchen. All your favorite recipes and dinner ideas are appreciated!
Edit: thank you all so so much. I took a few hours to finish up house work and came back to see you guys have really come through for me. I am going through and writing all these down. We are gonna have fun trying so many new recipes!

Sheet pan dinners - chicken thighs with root vegetables and potatoes tossed in olive oil, garlic, and herbs. Stir-fry, definitely. It's a good way to go meatless without sacrificing flavour, same with Thai curries with coconut milk. Simmer sauces with pork is good, over rice.
