I've read a lot of books that have maps, but the one that came to mind first was The Poppy War by RF Kuang. It is a political/military heavy fantasy, so I found myself actually looking at the map a lot throughout to get a better background for the politics. I also really liked the map in Ninth House by Leigh Bardugo. The book is set on and around Yale's campus, so it was an adaptation of the real street map of that part of New Haven. Then of course, there's The Lord of the Rings. The edition I have had the full map, and then zoomed in viewed of it in quadrants. Answer from snflwrsprkl on reddit.com
