When there's a flaming wood fire, the main things that are burning are combustable gasses which are emitted by wood when it's hot. The wood needs to be pretty hot to break down and release those gasses. In a typical wood fire, the spaces between pieces of wood contain a mix of combustible gasses and oxidizing gasses (Mostly O2 but others may be present too) which are reacting with each other, producing heat sufficient that in the semi-enclosed space between burning sticks, the temperature gets very high, so the surrounding wood stays hot enough that it continues to produce more combustable gas, in a self-sustaining way. If we were pull one stick out of a campfire and try to use it like a torch, it would start to cool off very quickly because there are no other hot logs around it helping to contain the heat, and as the temperature falls, less combustable gas is produced, and the flame gets smaller, and so even less heat is being produced, and before long the flame goes out. A matchstick can burn on its own because it's very thin and light and optimized so perfectly for burning, its own flame can heat it enough that a self-sustaining reaction can travel down the length of it. But it's unusual for a single piece of wood to be able to burn like that without being contained in something that either creates more heat or reflects heat back. Smoldering works a little differently, but the general idea is the same. The reactions can only happen when things are pretty hot, and there's the right mix of fuel and oxidizers (typically O2 in air). If the heat isn't contained, the temperature falls, the reaction stops, even when there's plenty of fuel and air to be had. A wooden incense burner could absolutely catch fire, if it's not designed with care. If it has voids like the spaces between sticks in a campfire, or grooves, or gaps, any space that can act like a tiny little oven, a flame inside that void could be self-sustaining. But, if it's basically a chunk of a dense, smooth wood without spaces that are hospitable to flames, and not too much exceptionally combustible resin content, it will be pretty hard to light it on fire with something as small and slow burning as a stick incense ember. I'm speculating a little, but I think cone incense on wood would likely be more dangerous than stick incense, because the ash pile can contain the heat from the relatively larger ember for long enough that the wood below starts to break down and burn. I've never used a FireMagic but have a Lynx which is similar. For the burners, did you clean the inside of the burners? Yellow flame typically means it's not getting enough air. Spiders like nesting inside burners and they can make webs in there obstructing airflow. Also make sure the shutters are properly adjusted and clear if there is a mesh screen over them. If it's the manifold you can also make sure the orifice in the manifold isn't blocked. You can probably remove it and use a fine needle to make sure it's clear. For the igniters does FireMagic use a collector box around the igniters? On my Lynx the collector box corroded away so not enough gas collected around the hot surface igniter to start it. Do they sell collector boxes separately? They do for Lynx. As for replacement grates, it's weird that they'd be rusting away. They're stainless and really thick. They're probably corroded a bit but they should still be usable. But if you want to replace them I'd get GrillGrate instead. I actually use GrillGrate on top of my regular grates. They're extruded aluminum ridged sheets with little holes in them. While you're supposed to use them ridge side up I use them flat side up to give me maximum surface contact. I think they're great and they're very highly rated. I have them on all my grills and they are the single best product that's improved grilling performance (and no, I have no affiliation with them other than really liking their product). The key thing for you is you can get them custom cut to fit your grill (almost) exactly. I say almost b/c each plate is 5.5" wide that lock together. You use multiple to fit the width of your grill but are still restricted to multiples of 5.5". They do sell gap filler plates as well. You can get them all custom cut so you can replace your grates.
