Any traditional building material can be (natural materials), fire bricks are but they are expensive. I used fire bricks for the inside face (placed after construction) and clay bricks for the external structure. Refractory cement is cement that can withstand heat changes or the heat in general, it’s is best but can be expensive. If you build your oven right with bricks touching at the inner face and good arches with good structural support- you should be fine. I built mine from literal walkway bricks from our old walkway with a bunch of new fire bricks. Overall insulation and general structural integrity are key. If you are doing something commercial, pay close attention to your angles and consult some brick math calculators for angles and such. A good wooden structure during building will help, there are many YT tutorials on types and shapes. All told, mine was prob just short of $600 with everything, mainly $200 for firebricks, $60 for insulation, and $250 for mortar and cement. Re: Fire brick approved for food contact? Fire bricks are not considered food safe because they are porous. How any bugs could survive 400 C is beyond me, but the regulators have different criteria. A wooden oven door is also not in the food safe category because wood is porous.

Should we be concerned with the type of materials used for inner walls, clearly firebricks are seen to be safe, is clay a good material also? How about refractory cement? Is there a specific kind, does it matter, am I over thinking the food safety aspect?
