I think a good project to include in your resume would be one that showcases many different software development topics. Try to include examples of abstraction, polymorphism, inheritance, and encapsulation in your project. Showcase your ability to create rest api's by handling post, get, put, and delete requests. Demonstrate your ability to work with databases. Tie it all together into a project that you'll find useful to you. You like Pokémon? Make a project that tracks all the shiny Pokémon you caught, how many attempts you've taken so far, calculate the odds of catching it for each attempt, etc... if you're feeling fancy make a variable called username that tracks its own set of Pokémon based on the string entered in the variable.
