I love taking photos, and I literally have over 50,000 photos and videos in my camera roll. Back before 2020 an app called Ever was where I stored all my photos—it shut down that year and I haven’t had another photo app since. I decided to pay $2.99 a month for iCloud or whatever and now it has reached its maximum and wants me to pay even more :( I think it’s kind of outrageous that a service which used to easily be free is now $40+ a year just to take and store photos. Are there any GENUINELY free unlimited photo storage apps, or how do you guys tackle storage issues?

You will find that "one off cost" and "unlimited storage" are hard to find in the same offering from a trustworthy company. It just is not a viable long term business plan. Flickr may have started that way, but their free plan is no longer unlimited or ad-free, and they want to move you to their Pro (periodic paid) plan. I do photography as work. I have years of photos. Not just the good ones, or the finished images but thousands and thousands and thousands of bulky raw files that I should have deleted. Between a few services (for various functions) I have ~1.2TB of photos as far as I can tell. Dropbox offers a plan that gives you 2TB of storage for $10/month ($120/year) which will undoubtedly be far in excess of what you need. iCloud’s pricing is the same, but I’m a fan of how well it integrates into the rest of the Apple ecosystem, since it’s an Apple product. For your purposes, I’d say do iCloud. My point is this, you do not need unlimited photo storage. If I, someone who dabbles with data for a living can’t use up 2TB of storage, you won’t with your private photos. More on reddit.com

You should not be relying on cloud storage as your only storage location for your photos/videos/documents. You should have these saved onto an external backup drive as well.

Two things...
1- I'm hesitating between Dropbox, Google photos, flickr. (not a fan of icloud), or name something else?
2-I just want to save my private pictures for memories, but I have so many. It's not that I mind paying the monthly fee, I was just wondering if there's a better app/site/wtv that would allow me to pay per x pics instead of monthly
Edit: Flickr doesn’t allow over 1gb for video upload.. so I’m also looking for something that would allow a larger GB upload..
