That's a gradient. I'm gonna teach you the long way to do it because I think it's easier for someone new to fine-tune. Type out your text. Get the right font and style, but size doesn't matter. Whatever's convenient for you to work on. Once you're done with everything (except size, because you can change that any time), go to the Type menu and hit Create Outlines. Your text is now an object. Now, draw a rectangle over the text. With the rectangle selected, go to the Object menu, then click Arrange, Send to Back. Then, grab the Gradient tool and make a gradient going from slightly left of the top-center to slightly right of the bottom-center. That doesn't look like what you want at all! but don't worry, there is hope. Open the Gradient window. If you don't see it, it should be in the Window menu, named Gradient. If it's checked and you don't see it, uncheck and recheck it to help you find it. Now, in that window, set Type to Linear, and on the gradient slider (that little colored bar near the bottom of the window), click slightly underneath it to start placing little sliders in it. You're going to want at least three. One in the exact middle and one on both sides of that one, very close. You can add more if you want a continuing color change. Anyway, color the middle one yellow, and the two outer ones orange by clicking on them to bring up a mini color dialog. You can also find a color you like in the colors or fill dialogs and drag them onto the slider directly. Figure out your colors, and re-draw the gradient as much as needed. Once you have the gradient lined up how you want it with your text, select everything, and go to Object, Clipping Mask, Make. Voila! You've got the gold effect! However, it still doesnt look quite right. The final step is to select all your text, and copy it. Hold CTRL (or Command) + Shift + V, and your text will be placed in exactly the same place you copied it from. Then, tap down, then right on your arrow keys once each, and select a dark fill as the color, instead of a gradient. Boom, shadows! Now, I said that was the long way. The quick way is to turn the text into a compound path right after creating outlines, and throw a gradient on top of it. But that can be finnicky to control when you are new to the program. Make a copy of whatever design you want to have this effect. Select your design, command 8 to turn it into a compound path. Then what I would do is find a swatch online with some different shades of “gold” (or just sample the colors in this image with the eyedropper tool). Bring that into illustrator, use your eye dropper tool to select the colors in said swatch and put those into your swatches panel. Then add a gradient to your compound path design, and play around with the different gold colors in the gradient slider. More on reddit.com

Colour codes are just that: representations of single colours like yellows or greys. Colours come in two basic categories: spot colours and process colours. This is used for printing purposes. Basic printing uses only process colours and the printer will therefore use its process to overlay different amounts of a few general-purpose pigments, usually cyan, magenta, yellow, and black (CMYK) to make up the colour you asked for. If you use a spot colour, you’re essentially saying that you have a special pigment just for that particular colour. A common example would be printing with a metallic-effect ink: you would put a spot colour in your document with some colour that looked vaguely representative of your ink, then the printer would see that it’s the spot colour corresponding to that pigment and use that special ink instead of mixing CMYK. If you’re intending to illustrate with the colours you’re picking, then what you’re looking for is making a (sub-)palette of colours for each metal represented. For example, a golden element will probably need at least three colours: “dark gold”, “mid gold”, “bright gold”. Pantone metalic and gold foil are not the same. If its printed in Pantone gold, you need to resupply the logo as a PMS spot with one of the Pantone golds. If its foil, I usually add the logo as a spot colour (pink usually) on a seperate layer (labeled something like "gold foil") when supplying the PDF to the printer.
