You can write a simple script to fill a cell color. Then you can assign this to a shortcut. You will need to predefine the colors. And you can only assign this to the shortcut CMD + OPTION + SHIFT + 1/2/3 etc.. Answer from RemcoE33 on reddit.com

I wouldn't mind learning how to change a single cell from its current fill colour (typically white) to a different colour without using the "fill colour" tab in the menu bar. Is this possible?

It would be great for temporarily flagging something red or green. I've typically just used the "paste format only" shortcut after having used the "fill colour" tab once. Although that still is a bit annoying as I am usually copying other things in between.
