This may be the key point: With few exceptions, superstar chefs choose Toronto at the precise moment they’ve hit overexpansion mode. I welcome great chefs opening restaurants in Toronto, but if you didn’t start out in Toronto then your first expansion restaurant is more likely to be in New York, Tokyo, London, or even Las Vegas than here. By the time you get to Toronto, you’re more likely to be a brand than a chef—and you certainly won’t be a chef that regularly cooks in the Toronto kitchen. Better, as the article says, to support local chefs in their success and expansions, and not out of some sense of patriotism (though there’s nothing wrong with that) but because their initial restaurant(s) are where the city’s best food is. Pretty sure he has no involvement in these restaurants, he just licensed his name. Also this is not his first foray into Canada. There was the Laurier Gordon Ramsay in Montreal back in 2011.
