I understand that heat sinks reduce temperatures of electronics by a significant amount but how exactly do they achieve that?

Youโve got one thing thatโs very hot. And youโve got either air or water surrounding it thatโs relatively cold. Heat is all energy. If you have just tiny area the size of a chip, very little heat can flow to the air. If you increase the area, more heat can flow. Adding fins increases the area.

The material looks like a solid panel with multiple "fins" on top. The heat travels through the panel and up into the fins making the whole thing around the same temperature. A fan blows on the fins, which cools them down via convection, and that temperature reduction travels back through the panel, which cools the Thing via conduction. Alternatively, water, or some other liquid, can be used in place of a fan to cool the fins. Moving liquid utilizes conduction, which is much quicker than convection at transferring heat. Basically, you're moving some heat to the outside of the Thing so that it can be cooled down, which transfers some cooling back to the Thing." "It's a type of heat exchanger. It's made of something thermally conductive (you see aluminium pretty often) which absorbs heat from what you're trying to cool, by conduction. Then, the heat is transferred via convection to whatever fluid you're using. Often you'll see air used with a fan forcing it over the fins, but you can also use a liquid to do the same." Was looking at Intel core i7 across different websites and the cheapest one said heatsink not included.
Do I need that? Im going to buy the air cooler NH-D15 which is supposed to be a heatsink?

The heatsink is basically the metal components that are part of a cooler and that perform the heat transfer. Most coolers come with a fan to increase cooling performance. The NH-D15 is a CPU cooler so yeah, it's the combination of a heatsink and 2 fans.

Tray processors don't come with the stock cooler. It just means that you have to buy an alternative cooler/heatsink and yes they are essential.
