Just sharpened my Henckels knives and they actually seem worse, what did I do wrong?
I am still a beginner, but I am able to get knives pretty sharp and cut paper easily and cleanly. The thing that helped me the most was learning to sharpen on one side until I felt an even burr along the whole edge and then repeating on the other side. You will have to reduce the burr size and remove the burr by reducing pressure and then using stropping motions. I would start by only using your 1000 side. You should easily be able to cut paper and food with a 1000 grit edge. Also, 1 minute seems a bit short, so be prepared to spend more time on each knife. Let me know if you have any questions about what I said or if you have any additional questions. Good luck! They also often have beefier handles and overall heft. Japanese-style blades often (but not always) have a leaner, straighter edge and require more of a back-and-forth slicing motion.
