I want to update my profile picture by uploading a new one on Facebook, but I don't want everyone/anyone to see that I did or for it to get get sent to newsfeed, what do I do? If I were to upload it and change the viewer settings to only me, then switch it back after a day would that work?

I think you can make the post and change the 'audience' setting before you post it from friends to only you.

Even if you could hide the story from your timeline, it never prevented it from appearing on other people's news feeds. I distinctly remember a notice appearing when you tried to hide stories, saying they could still show up on friends' news feeds and other places on Facebook.
You can change your profile picture's privacy setting to "only me" (which I don't think you could 6 years ago), which prevents people from accessing its details page (description, reactions, comments). I'm not sure if that'd prevent a story from being created, but I think that's your best bet.
