Backup is what you need. Go into Settings->Your Account->iCloud->iCloud Backup->Backup Now. Then delete your phone. Then when setting back up choose to restore from Backup. However be aware touchscreen probably is not software related. For anyone stubling on this thread try methods from No-Eggla and Independent-Try1009. They both worked for me. Also I recommend creating local backups, at least once every few months, or bi-weekly if you're taking a lot of photos\vids. iTunes or Finder as basic options to do so. Seems with the data you are looking to keep you are fine with a full factory wipe and start up device refresh and not from a backup. When you sign I to iCloud all that apple data you are looking for will sync back I to play. Go to your iCloud settings now and confirm all is clicked to backup that you are looking for. Wipe your device, sign in and enjoy. If for some reason things don’t work out as planned, you can wipe your device again and just restore from the full backup. When you reset the 2nd time it will want to backup again just cancel that because that’s the image you didn’t like. For the watch. Yes that would need to get reset and resynced with phone once you reset phone to factory. All 3rd party apps will be lost from there but your health data with stay intact as long it was backed up to iCloud. Again if all fails and you restore phone from backup you also can restore watch from backup just as if you got a new watch.
