Freeform Gradients cannot be saved to the Swatches Panel because they are dependent on the shape you created it on (position of Points or Lines). My advice is to create a CC Library and add the gradient there. That way, you'll be able to use it easily in other Illustrator documents. Or even other apps like Photoshop or InDesign.
