How do I do this and what temperatures (triggers) should I choose?

Monitor your temperatures with attention, it is very important to understand how temperature works.
Add a linear curve and try these settings:
Don't forget to select your CPU package as a temperature source and select the graph on the CPU temperature. Ensure that "Manual Control" is turned off.
You can add the tray icon on the left menu to help you monitor the temperature.

To create fan curve on Fan Control, select the + icon on the bottom right corner > "Add "graph" fan curve" or "Add "linear fan curve" fan curve".
Set the curve, select the device you want to control the temperature > Select the curve you created.
