AMD 9800x3d vs Intel i7 14700k for a combination of gaming and machine learning? Which one is better? I'm leaning towards the Intel for the performance over a range of tasks but I'm wondering if I made a mistake.

About 4 years ago I built my current PC and I am looking to upgrade soon. I have a large case and a powerful PSU, so I'm only looking to replace the mobo, CPU, RAM and GPU. These are my current specs:

4x8GB DDR4 3200Mhz CAS 16
I'd like to upgrade to the following with a budget of about 1'000 Schrutebucks:

NVIDIA RTX 5070

2x16GB DDR5 6000Mhz CAS 30
Now I'm wondering about the choice of CPUs. I am looking at either the i7-14700K(F) or the Ryzen 7 9800X3D. On paper, the i7 has more cores and afaik still better single core performance, as historically with Intel vs AMD chips. But I've read that the enlarged L3 cache on the Ryzen 7 makes a large impact on the gaming performance. Overall I'm tending towards the i7, but I'd like to hear some of your opinions on this matter, especially since I haven't followed the latest updates on technology.
Also, if there is anything else I should consider for the upgrade, or if you have other hardware recommendations, please let me know. Have a nice day :)

I'm facing a complete platform switch and am extremely undecided. My goal: The system should last the next 5-10 years. I game on a dual setup (4K up to 240Hz Ultra for immersion / FHD up to 440Hz for competitive gaming).
My setup: GPU: NVIDIA RTX 5070 Ti Cooling: be quiet! Light Loop (360mm AIO) Case: be quiet! Light Base 900 FX PSU: be quiet! Straight Power 12 850W Platinum
Usage: Gaming + Discord + Firefox (no editing/streaming)
The candidates:

Intel: i7-14700KF/ i5-14600+ ASUS TUF Z790-Plus + Patriot Viper Xtreme 5 (XMP). ... I've looked at countless benchmarks and I'm confused because the results vary so wildly:
The "sick" boost: In some videos (e.g., Baldur's Gate 3 or simulators), the Ryzen 7 9800X3D mercilessly outperforms the Intel i7 with 50% more FPS while consuming 70W less. In these moments, AMD seems like it's from another planet.
The "opposite": But then there are just as many videos where the i7-14700KF is ahead or at least on par, even consuming less or the same amount of wattage as the AMD. Often it seems completely balanced.
I don't care about 10 FPS if it costs me 100 watts. But just because Intel can output 150W more doesn't mean it will in real-world use. Maybe it's advertised with that much power, but I'll never actually reach it.
The community seems divided. Some say AMD is currently unbeatable in terms of efficiency and gaming power. Others claim AMD is less stable and can't compete with Intel.
Socket & Risk: LGA1700 is nearing its end, AM5 still has a future. But is the i7, with its 20 cores (8P + 12E), "more secure" for the next 10 years than AMD's 8-core processor? I don't plan on rebuilding my system every 2-10 years.
I've also heard about the instability issues with Intel's 13th/14th generation processors โ has the microcode update really resolved this?
I've always used Intel and don't really see any reason not to switch if AMD is truly "better." But at this price, I don't want to risk buying the wrong thing.
What's your experience?
