Heaps. Archaeopteryx is known from 11 specimens, Plateosaurus is known from about 100, the Australopithecines are known from about 400 and that’s just some examples from among vertebrates. If you look at invertebrates and plants the number of specimens can climb into the thousands or even tens of thousands. Some foraminifera might be known from millions of specimens. More on reddit.com

also I need a lot more metal and the rocks around my base aren't gonna cut it anymore. are there any better ways?

For your title question, iguanadons are herbivores and so are go for gathering berries and thatch, but have a special feature where they can turn berries in their inventory into seeds that can be planted to get a passive supply of them. IIRC they’re a good early game tame, but you’ll probably want something like a stego, therizino, bronto or even just a trike later on since they can gather in a larger area and/or have more options for what they can harvest. As for your metal needs, there’s several mountains inland that have “metal nodes” on them that give much more metal. I’d recommend getting an ankylo and an argent when you start trying to farm those nodes since ankylos have the ability to harvest rocks and metal nodes and both creatures have weight reductions for metal. Plus argents are a solid tame for anyone since they are flyers (making accessing distant parts of the map easier and safer) and can pick up most small to mid sized dinos.
