I’ve seen multiple posts that they can’t stand the pictures that the 14 Pro takes because it’s overly processed and that even the 11 Pro is leagues better in terms of picture quality. Is this actually the case? What do you guys think?

iPhone 11 (or pro) or an actual camera (Canon Rebel T7 (or T7i)) for social media?
Personally I'd get a new iPhone unless you plan to shoot photography / video professionally.
Why?:

DSLRs can be cumbersome, take up extra space in your bag/luggage, take longer to set up, and require you purchase additional lenses, ND filters, microphones, etc...

iPhone cameras come with additional features that are easier to achieve on the device instead of in editing software (slow-mo, etc)...

iPhones are more stealth, if you're shooting places that don't allow cameras, also don't draw as much attention if you're shooting on the street / grocery stories / etc...

You can still edit things shot on iPhones on your computer if you plan to do any post production / color / etc...

If you're concerned about sound quality on a phone, they make mics that plug into the phone so you can still have that pro feel....that are still cheaper than buying a DSLR. I've shot plenty of content for YouTube using my iPhone.

Platform algorithms can recognize if you shot on mobile, or within the app.

I also have the iPhone 11 Pro Max from release day and have not ran into this at all. I’m going to try it in a quite room.
