Whenever I try take a photo by quickly opening camera, pressing volume or the white button it normally works. But half the time, it enters this mode where it asks me to hold the phone still for a few seconds or the photo will be incredibly blurry so it can remove the darkness
It’s a great feature, but it’s ruined a lot of photos I’ve wanted to take where it’s gotten in the way and ruined the chance
Is there a way to just completely disable it auto turning on? Thank you!

I am a theater lighting designer and besides photographing my cats, my primary use for the camera on my iPhone 8 was photographing my work live on stage. The camera on the 8 was so good that I stopped bringing my DSLR to performances. The HDR and quick exposure adjustments rendered great photos in a wide variety of lighting conditions with practice. High contrast, low lighting, moving subjects, wide color gamut, etc.
When the 11 came out with the incredible detail I was seeing in the “night mode” promo shots, I thought would be great for what I do. I am sorely disappointed. Night mode engages automatically rending very blurry action shots, and is VERY over zealous, resulting in blown-out, over exposed stills. If I disable it, the “HDR” is WAY worse than it used to be, and there doesn’t seem to be a way to PERMANENTLY turn it off by default? There also doesn’t seem to be a way to turn it down - for example, it often picks three seconds when one might give better results, but there doesn’t seem to be any way to override it?
At this point, I am strongly considering going back to an 8, (but I’d miss FaceID too much...).
Before I throw it in frustration, Is there any way I can override these new features? Are there third party camera apps that are a) quick an easy to make adjustments on the fly, and b) can take better advantage of the improved camera for my circumstances? I have used camera+ in the past, but making adjustments was very kludgy...
EDIT to fix a spelling error and try to clarify that I'm looking for a way to PERMANENTLY turn night mode off, so that it's not coming back on every time I leave the camera app, or it goes to sleep or whatever. Also a lot of people assuming you can adjust the time because there's a slider there. Sure, you can turn it up if it's not at max, but you can't turn it down, only off. Which of course, it doesn't remember if you leave the app.
