Guess its time to turn 5G back on and see if it usable day to day. on my 13 Pro I was constantly annoyed by situations where the phone (on T-mo, mainly in the Philly area) would say it had a 5G signal but really needed to switch towers or bands or something because the data either wouldn't work or would be slow enough to be perceived as not working.
