Regarding charging, all USB-C cables will deliver at least 60W per the USB-C standard. The iPhone 15 takes 20W officially, 27W unofficially. This means that any USB-C cable is sufficient for charging the iPhone 15. All that matters is the power adapter that you use. The USB-C cable that comes with the iPhone 15 uses USB 2.0, so it will transfer data at 480Mbps. This is the maximum possible on the base iPhone 15 models. If you have a Pro, you can transfer data at 10Gbps if you get yourself a USB-C cable that uses USB 3.2. This will have no effect at all on charging speed, just data transfer.
