I think you are on the right track. You do have more glossy choices that you like, not a bad thing but matte might work better. I choose and plan tile with look but also details in how it will be set. Edge finishes if exposed is huge because schluter on an organic look isn’t ideal. I also plan my heights and design to see where cuts will be and maximize flow. Sometimes sizing is super important from that aspect. I would say lean into what you love and the first few work better than the last few. Next I would be looking at flooring and hardware/lighting to make it all work together. I build from the bottom up…flooring, cabinets, counters, backsplash, lighting, hardware then paint and grout. If you want a more organic aesthetic then I love the square, but if you want a little sleeker modern organic then the subway, but again it is primarily about the layout. Also be aware how warm your stone is - hoping your floor choice helps to balance that as it is a very bold statement in your space! I love that you are leaning into it. Generally, they are all the same. Historically, people used to use smaller tiles in the bathroom, and larger tiles in the kitchen, but modern design has mostly done away with that. You should however consider the finish of the tile for your application. You may not want to have a perfectly smooth and slick tile for use on a bathroom floor (too slippery under wet feet), and you probably should avoid using a rough surface tile on your counter tops (too difficult to keep clean) More on reddit.com

I would suggest making backslash tile or accent tiles and plan on buying the bulk of what you are installing. I made leaf tiles by rolling a real leaf into the clay and cutting around them. It took forever, but I love it. If I were to do it again, I would use more commercial tiles and make half as many. As far as process, I rolled them out, rolled the leaf on, cut around them with 1/2 inch or so extra space, dried them to hard leather in between pieces of drywall, cut them out at the edge of the leaf with a craft knife, put them back on the drywall to finish drying then fire and glaze. I had more problems with some of the bigger tiles warping but not on many. Because it was kitchen backslash, I used a low fire clay ( not something you could get away with on a floor).
