I wouldn't trust a peel and stick product long term honestly. You're at the mercy of the lifespan of the adhesive, and any imperfections on the wall surface will limit that. Mortar is much more forgiving and long lasting.

Hello! My husband and I just bought our first house together, and it needs a lot of updating.
This is the existing kitchen floor in the picture… first question, what flooring material is this? And also, can we just apply peel and stick vinyl tile directing over this? Or, do we need to demo it first?

That looks like rolled or sheet linoleum flooring. You could stick peel and stick vinyl tiles over it, but it kind of looks like it’s separating at the seams, so it may affect the longevity. I did it over a piece of linoleum and it’s lasted 10 years so far but my linoleum didn’t have any seams.
