Nah that's rubbish. Catering equipment by and large is cheap and nasty, it's not the best stuff you can buy because the catering industry isn't interested in buying the best kit. They just want something that is cheap and lasts a decent amount of time before they have to replace it.

I tried buying some catering knives, they are worse than a decent global knife at holding an edge because catering companies will have someone come and sharpen their knives professionally once a week.

He is an actual chef ffs... his inexperience working in a line format is what lead to his ridiculous mistakes. And yes he was delusional about his skills, but his team didn't make it any better.
