I see a PC I'm thinking of is liquid but I've never owned a liquid cooling PC. Is it hard to work on? Do they tend to have problems that aren't very apparent?

without your list of your pc parts i cannont say anything which will be better!
i prefer air coolers, but even quality aios are completly fine! for me air cooler wins because of ease replacment! i mean you buy yourself a cooler with one. two, three fans. and base of the air cooler is almoust impossible to destroy yes? and it will last you quite some time! and replacing fan is easy if fan dies yes. now aios if pump dies new aio is needed!
but as i said, quality aio should last 5+ years no problem and yes there is also a water leakage possibility but its minor one! Artic, be quiet!, nzxt, corsair, lian li, phanteks, fractal desing are making quite quality ones and most of them comes with 5 year warranty! cant say for others though, heard about problems on msi and coolermaster ones (some models!) but for me if i would go aio i would pick myself quality option for peace of mind!
