Appliances: base it off what's in the apartment. You'll need a microwave, probably a toaster. I'd stay away from an airfryer or rice cooker for now until you know you have the space. Pots and stuff: a medium sauce pan, a ~10 inch frying pan, and some kind of pot with a lid are probably good enough to get you started. I think having one non-stick frying pan is always good, for stuff like eggs and pancakes and whatnot. Knives: just a chefs knife and a paring knife will be enough to start with. A serrated knife would be the next one I'd get and is great for bread, tomatoes, stuff like that. Spoons/spatulas: get a couple wooden spoons, a rubber spatula (for anything non stick), a metal spatula, and some kind of slotted spoon. Ingredients is a whole thing and you'll need to figure that out yourself probably, but start with salt, pepper, and a neutral oil. Then get stuff based on what you want to cook.
