Knautia (Macedonia) is a very low maintenance, non invasive perennial, comes up every year, perfectly suited to the UK weather. Do you have any allergies? The reason I ask is one of the ones I suggest being sage is known to be easy but some are deathly allergic to it. For easy though maintenance shrubs I would go sage, seaberry, lavender, spirea and lilac. Lavender you just really have to look depending on your zone because according to the old zone map I am zone 5 and some are zone 6 and up. For seaberry you may have to define big and lilac you are looking at different sizes for cultivar. More on reddit.com

By low maintenance I mean drought tolerant, caliche soil tolerant, and don’t require a lot of pruning to keep a nice shape. I’m already thinking Texas sage and maybe lavender and fire yucca. Anything else that I could potentially plant it and forget it?

If it doesn’t have to be evergreen, you might consider turk’s cap. It does excellent in shade and sun and hummingbirds love it.
