Get the M4. Just from personal experiences with mine having that same spec and usage pretty much like yours plus doing lots of research and weather analysis I have had no issues whatsoever with it. It’s fast, smooth and awesome battery life. Tahoe on it is pretty nice. More on reddit.com

I apologize profusely for asking the "M4 Pro vs. M5" question for the 10000th time. I've looked through many of the previous threads but didn't see any that takes into consideration these new price points.
Best Buy has great deals on the M4 Pro (24 gb / 512 gb) for $1599 and the M5 (24 gb / 1 tb) for $1749.
I'd be using it for every day browsing, Lightroom photo editing (hobby wildlife photography), and short Da Vinci edits. Is the extra SSD space and battery life of the M5 worth the $150? I'm not sure I'd push the computer hard enough to realize all the benefits of the M4 pro.
