Mekanism machines: what the hell??
There's a "side configuration" tab in the top left of some machines (not all have them). This is split into multiple tabs, those being items, fluid, gases, energy. Everything is color coded in the main GUI. It will also tell you what each color is doing when you change it in the side configuration tab.
If you are using the Electrolytic Separator and input say water to get Oxygen and Hydrogen, and you only need the oxygen, then you can set hydrogen to either dumping or dumping excess. These buttons are there because if you leave it on idle, the machine will not be able to work because the other buffer (in the above example, Hydrogen) will be full. This means you will not be able to generate anymore oxygen until you get rid of the hydrogen. Generally you want to set it to dumping excess just so if you ever do need the hydrogen then you can just hook up pressurized tubes and extract it.

hey so i've been checking out Mekanism addons and i saw these large machines and been wondering, are they worth the trouble? they seem to have tons of inputs and outputs around them but no actual configuration within them like all the other mekanism stuff does, so i'm afraid it'll be annoying to deal with. has anyone used these yet? are they worth it?
When I was trying to setup ore quadrupling, the machines outputs and inputs were so confusing because the machines don’t tell you what they’re outputting on each side, unless you test it with a pipe. On top of that, the dumping/dumping excess/idle things make no sense! Why does the machine stop creating one type of gas when it’s on idle and only make the other?? Am I the only one getting this issue? And please help because this mod isn’t making sense anymore.

Let me try to explain this...
So, with the Electrolyzer, the Front face, the one that faces towards you when placed, is the Input, now look at the GUI, and observe which sides the Gas Outputs are on, the Left Tank outputs to the Left side, relative to the Front Face, the Right Tank does the same thing, but with the Right.
Now, with the Chemical Infuser, it's once again, relativity to the Front face, the Left input is the Left Tank, Right input is the Right Tank, Front face is the output, again, relative to the Front face.
With Mekanism's Inputs and Outputs, it's always Relativity to the Front face when you place it, if you pick up a Machine with Configured I/O sides, when you place it back down, the I/O sides will be the same, but relative to the Front face, if you placed it down facing East initially, and configured it so it outputs to the North, and then pick it up and place it down facing West, the output will then be facing the South.
