You don't need to know "all" of them. You need to learn them as you encounter them. If a piece of sheet music is full of a bunch of symbols you don't know, there's a good chance that you're not ready to play that piece of music yet, and/or aren't learning music the way you should be and it's going to come back to haunt you later. Taking lessons would be a great way to learn what you need to learn in the proper order so you can continually advance.
