Sounds like you've already done two coats of Danish Oil, which cures and polymerizes into a protective coat on its own. Additional steps are optional! Are you asking for advice in regards to protection or for appearance? For protection: I think you're good to go. Poly would be better able to hold up to moisture and scratches, but console tables usually don't get the wear and tear a desk or dining table might. Coasters would be needed for drinks, but I'm thinking that's not the table's purpose. On the other hand, if you do choose to go poly for the extra protection, an oil-based poly can go over the danish oil without needing the dewaxed shellac step. Just make sure the Danish oil fully cures first. For appearance: It's your table, so you're definitely the best judge here. If the danish oil on its own isn't the look you're going for, let us know what it's missing and what kind of lumber you're using (upload a picture if possible) and I bet you'll get some helpful comments. Generally speaking though, a poly topcoat is probably not your best aesthetic option, as it sometimes results in a plastic look and feel. Keeping it thin may help or fix this completely, though. A console table was my first learning project, and I remember how daunting finishing was when I finally completed the build. The truth, though, is that it probably doesn't need to be as complicated as you're thinking. I ended up using danish oil only, and it's still holding up nicely after a year or so! More on reddit.com
