So I slapped this together with Chatgpt using the Office Deployment Tool (link) and Office Customization Tool (link). I hosted the setup.exe and and the configuration.xml on my project page so the script can just wget those two files and then the script runs the command to download office and second command to install. Just download the script, open a PowerShell terminal as admin, cd to the folder the script is in and .\Install_Office.ps1.
The code is unsigned so you need to temporarily "Set-Execution Policy Unrestricted". I have notes about dependencies in the repo, windows needs .Net Framework to run the setup.exe file (most Windows 10/11 installs will have this already).
The script is quite simple and makes it very easy to deploy Office 2021 LTSC. Of course you will still need a license for this version of office, but there are many sites that sell discounted Windows and Office license that should be compatible.
I post this hoping that it will show others deployment tools they may not have known exist. I am quite a rookie coder and the majority of the thanks goes to ChatGPT. So far I have tested on Windows 10 and 11. Let me know what you think.
There appear to be many great deals on Office Professional 2021 right now but not so on Office Student 2021.
I have a stand alone PC with Office 2019 and want to upgrade to 2021. I'm not interested in 365.
I've read about Office Deployment Tool (ODT) but I am a little confused.
Can I use ODT to customize the installation of Office Professional so I only deploy only Word / Excel (which is all I use) on a standalone PC?

I am interested in any pointers or assistance on how to make a deployment that would remove Office 2021 and install\replace with Office 2024 LTSC (volume license). I have created my application for Office 2024 in SCCM using the Office 365 Installer that creates both the package as well as the XML file. Is there a method to update the XML file for the Office 2024 deployment that would also remove Office 2021?
Has anybody successfully started deploying Office 2021 Home & Business using the Office Deployment Tool? I've been using it for 2019 for a couple of years and it's been great, but when I run it for 2021, it exits in 10 seconds or so and obviously doesn't install.
I'm using the config below, and this article confirms that "HomeBusiness2021Retail" is a supported product ID.
EDIT: I ran setup with DisplayLevel=Full and it popped up showing it was installing, for about 10 seconds, then said "installation complete" and exited.
However, I found that by changing nothing except "HomeBusiness2021Retail" to "HomeBusiness2019Retail", it installs 2019 correctly. It makes me think Microsoft hasn't properly implemented the C2R package for 2021 yet, even though running setup with the "download" switch does download over 2GB of files, supposedly for 2021.
